HOW TO MAKE NASI GORENG

Ingredients

  • 4 cups white or brown rice, previously cooked
  • 2 carrots
  • 1 medium yellow onion
  • 1 clove garlic
  • 1 tsp. fresh ginger
  • 1 cup bean sprouts
  • 3 eggs
  • 1 pinch black pepper
  • 1 pinch salt
  • 4 tbsp. soy sauce
  • 2 tbsp. vegetable oil, plus 2 tbsp. additional sesame oil
  • Green onion for garnish
  • Shrimp, chicken, pork or tofu, already cooked (optional)

    Prepare 4 cups of cooked rice, if you haven't done so already.

    Wash the vegetables. Dice the carrots and onions. Set them aside.

    Add oil and turn the burner on, setting to medium heat.

    Toss the vegetables into the pan for about 3 minutes. You want the vegetables to "sweat", not brown. Add 1 teaspoon of salt into the pan.

    Incorporate the cooked chicken or shrimp into the rest of the ingredients (optional). Because fried rice is a quick way to get rid of common items in your pantry or refrigerator, the chicken, shrimp, or pork is usually already cooked. If you want to incorporate protein into your fried rice, however, and don't have anything already cooked, dice or shred some meat (leave shrimp whole, but be sure to wash and de-vein them) and sauté it with a bit of oil until cooked over medium heat.

    Put a bit more oil into the frying pan.

    Add the eggs to the pan. You can either scramble it with the other ingredients or scrape everything to the side and quickly cook the eggs in the middle of the pan.

    Toss the rice in carefully. Fry for about two minutes, just enough to heat up the rice and mix all the ingredients together. Add approximately 2 to 3 tablespoons of soy sauce and fry for another 30 seconds. Remove pan from burner.

    Put the fried rice on a dish and serve immediately.

  • Fried rice is a great way to utilize various leftovers or items in your refrigerator. One way to save time is to use a handful of diced, frozen mixed vegetables — peas, carrots, peppers etc. add color, nutrition and flavor in seconds.
  • It's recommended to use overnight left-over rice for fried rice because it is firmer than freshly cooked rice. This will prevent rice sticking together while stir frying.
  • You can substitute butter for oil.
  • There are many things you can add to fried rice. You're really only limited by your imagination. Here are some ideas:
    • Tofu
    • Chicken
    • Pork
    • Ham
    • Beef
    • Vegetables, such as peas, broccoli, or bamboo shoots.
    • Lup cheong, also known as lop chong, or Chinese sweet sausage, is a wonderful, traditional addition to fried rice. It should be cooked (steamed or pan-fried) first, and diced or sliced before being added to the fried rice.[1]
    • Oyster sauce, which can be found in Chinatown, adds great flavor, and doesn't taste like oysters. only a little is needed, and you can add after cooking. The Lee Kum Kee brand is good. However, some may contain MSG, so check the label if you want to avoid that.
